Delicious and Easy Banana Bread

I find my family sometimes avoiding eating the bananas on the counter to ensure this banana bread is made soon! They know that once the bananas ripen a bit too much, if there is three or more left, then I’ll be making a loaf of this delicious and moist banana bread within a day or two!

This recipe is adaptable to as many or few mixing you’d like to add such as chocolate chips and walnuts or a cinnamon sugar swirl!

Streusel Topping (Optional)

Delicious and Moist Easy Banana Bread

Ingredients
  

  • 3 large Bananas very ripe
  • 1/3 cup Unsalted Butter melted (76g)
  • cup Granulated Sugar
  • 2 Large Eggs
  • 1 tsp Vanilla Extract
  • 2 cups All-Purpose Flour (240g)
  • ¼ tsp Salt
  • ½ tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1 cup mix-ins optional

Instructions
 

  • Grease a metal loaf pan (I like to grease with butter & line with parchment) & preheat the oven to 350°F.
  • In a bowl, mix all dry ingredients (flour, salt, baking soda, baking powder & cinnamon)
  • In a large bowl, use a fork to mash all 3 bananas, until no large pieces remain.
  • Add the melted butter to the bananas and mix to combine.
  • Add sugar, eggs and vanilla and mix again till well combined.
  • Add dry ingredients and mix just until no dry flour remains visible.
  • If you are opting to add mix-ins, do this now, and mix lightly just to distribute. My usual is 1/2 cup chocolate chips & 1/2 cup chopped walnuts
  • Pour the batter into the prepared loaf pan and bake for 45min, all ovens are different, so test with a toothpick (inserted into the centre should come out clean/dry). Let it cool in the pan for about 10min before transferring to a wire rack to cool completely.

Notes

NOTE 1: great with extremely ripe bananas
